| 【外观性状】系葡萄糖、鼠李糖和柚配质的复合体。白色至浅黄色结晶性粉末,在水中结晶者,为含6~8个结晶水的结晶体,熔点83℃。在110℃下干燥后可得含2个结晶水的物质,熔点171℃。极苦,用水稀释5万倍后仍有苦感。在常温水中的溶解度为0.1%,75℃时为10%。溶于丙酮、乙醇、温醋酸和氢氧化钠液。经水解加氢后所得“柚苷二氢查耳酮”为甜味剂,甜度约为蔗糖的150倍。 | |
